It must be blueberry season because my feed is full of every imaginable blueberry-flavored baked good possible this week.⁣
⁣
So I thought I’d get in on that too.⁣
⁣
This is my go-to blueberry muffin recipe. It’s a one-bowl wonder that tastes just like it came from Grandma’s oven, with a soft muffin base and bursting with blueberries. I like to dust a little turbinado sugar on top before I bake it to give it that bakery-style crunch, but it’s totally optional.⁣
⁣
Here’s how to make them:⁣
⁣
➡️1 ½ cups all purpose flour⁣
➡️¾ cups granulated sugar⁣
➡️½ teaspoon salt⁣
➡️2 teaspoons baking powder⁣
➡️1/3 cup vegetable oil⁣
➡️¼ cup unsweetened applesauce⁣
➡️½ cup unsweetened plant milk, or more as needed⁣
➡️1 ½ cups fresh or frozen blueberries, plus extra for garnish⁣
➡️OPTIONAL: turbinado sugar, for garnish⁣
⁣
1️⃣ Preheat oven to 400F and line a standard muffin tray with liners.⁣
In a large bowl whisk together flour, sugar, salt and baking powder. ⁣
⁣
2️⃣ Make a well in the center and add oil, applesauce, and almond milk. Stir just until a batter forms (it will be thick and sticky.) Gently fold in 1 cup of blueberries.⁣
⁣
3️⃣ Scoop out batter into prepared tray, filling each well about 2/3 full. Top with remaining half cup of blueberries, pressing each one gently into the muffin batter. Sprinkle with turbinado sugar, if using. Bake for 22 minutes or until a cake tester inserted in the center of a muffin comes out clean and the muffins are lightly golden.⁣

Last night we turned Taco Tuesday into TOSTADA TUESDAY – and it was a huge hit!⁣
⁣
This was a fabulous 15-minute meal that used only 7 everyday staple ingredients to create a filling, delicious, fiber-and-protein-rich meal.⁣
⁣
Of course, my kids were more impressed that they got to eat it with their hands!⁣
⁣
Cheesy Bean Tostadas⁣
⁣
➡️1 bag store-bought corn tostadas⁣
➡️1 can of refried pinto beans⁣
➡️1 bag Daiya vegan cheddar-style shreds⁣
➡️Taco sauce (hot or mild)⁣
➡️Assorted toppings (we used ripe avocado, pickled jalapeno, and fresh diced red onion) ⁣
⁣
1️⃣ Warm the refried beans in a pan on medium heat with about ¼ cup each of shredded cheese and taco sauce until all melted and combined.⁣
⁣
2️⃣ Spoon a generous layer of the beans onto tostada shells, top with more cheese, and bake for 6 minutes on a foil-lined baking sheet at 400F.⁣
⁣
3️⃣Drizzle with more taco sauce, add garnishes, and serve.⁣

The salad and pastas are both vegan and gluten-free. The pizza crust is not gf (but it is vegan). Some of their locations have gf pizza but this one doesn't. ⁣

But since both our pasta dishes already existed on the gf menu, they made sure they were prepared vegan so my husband and I could share everything.⁣

If you're okay with gluten, then the vegan menu is pretty good in terms of choices.⁣

These “Mall Noodles” have saved dinnertime in my house more times than I can count. It’s my go-to dish when I haven’t meal-planned, and I can’t justify ordering pizza again…⁣
⁣
A take on the classic food court staple, these teriyaki udon noodles use just 6 simple pantry/fridge staples (plus any optional veg you want to use up) and cook in less time than you can get delivery. It’s cheaper than takeout too!⁣
⁣
And both my kids love it, which is a miracle in itself.⁣
⁣
Here’s what you need:⁣
⁣
➡️3 pouches udon noodles⁣
➡️4 tbsp low sodium soy sauce⁣
➡️2 tbsp vegetarian hoisin sauce ⁣
➡️2 tbsp maple syrup⁣
➡️2 tbsp neutral oil⁣
➡️1 block extra firm tofu, drained and pressed
➡️OPTIONAL: any veggies you want or need to use up, diced or sliced thinly⁣
⁣
Directions:⁣
⁣
1. In a large pot, cook udon noodles to package directions (usually 3 minutes). Drain and set aside.⁣
⁣
2. In a small bowl, whisk together the soy sauce, hoisin, and maple syrup. Set aside⁣
⁣
3. Slice tofu into 1-inch x ½-inch strips and pan fry in oil until golden on each side. OPTIONAL: add in veggies, stir frying until cooked as desired⁣
⁣
4. Add noodles and sauce, and cook for 2 minutes, tossing to coat completely and serve⁣
